Steamed Mussels with Tomatoes and Chilli

Cook time: 10 minutes

1 Tbsp olive oil
3 cloves garlic, sliced
1 red chilli, sliced
200g fresh tomatoes, diced
½ cup white wine
2 spring onions, chopped
16 mussels, cleaned
½ cup chopped coriander
1 cup Italian parsley leaves

Lemon wedges

Method

  1. Warm the oil in a large pot. Add the garlic and half the chilli, and then cook for 1 minute. Add the tomatoes, wine, and one spring onion and bring to a simmer.
  2. Add the mussels, place them on a lid, and cook for 8 minutes until steamed open.
  3. Serve hot, with buttered, toasted Harvest Rye.
  4. Garnish with Italian, extra spring onions and chilli.
  5. Serve lemon wedges on the side to squeeze.
