PĪNATI PATA PARĀONE

1-2 cups raw pīnati
1- 2 tablespoons manuka honey
Pinch of salt

1. Spread the pīnati evenly on a baking tray.
2. Roast in the oven at 180 degrees until lightly browned and nutty smelling. This will take about 24 minutes. Give the tray a shake every few minutes and keep a close eye as they can easily burn.
3. Remove from the oven and leave to cool.
4. Put the roasted pīnati, manuka honey and salt, into a blender then whiz until smooth. Scrape the sides of the blender every minute or so to keep the mix even.
5. Transfer into a bowl and let cool for about 10 minutes before scooping into a jar.
6. Spread it onto your favourite Ploughmans and enjoy. Mean!
