PATA PARĀONE
Half a block of pata (yes, that’s it!)
1. Cube the pata (butter).
2. Gently melt the cubes over a medium heat, stirring the entire time. After about 7 minutes the butter will turn parāone and smell nutty.
3. Remove from the pan and pour straight into a bowl. Stir as it cools so the solids don’t sit on the bottom.
4. Once set, cut the pata parāone into small, easy to use cubes.
5. Enjoy with a toasted slice of your favourite Ploughmans before popping in the fridge for later.
