
Bread & Butter Pudding

4 eggs
¼ cup caster sugar
1 tsp vanilla
¼ tsp cinnamon
2 cups milk
200 ml cream
6 slices of Ploughmans bread
50g softened butter
½ cup frozen berries
¼ cup apricot jam
Method
- Preheat the oven to 180°C. Grease lightly a 1-litre ovenproof dish.
- Whisk together the eggs, sugar, vanilla, cinnamon, milk and cream.
- Butter the bread and cut it into triangles. Arrange in your baking dish.
- Pour over the egg mixture, soaking the bread.
- Bake for 15 minutes, then brush with the jam. Cook for another 20 minutes until golden.
- Serve it warm alongside vanilla ice cream.
