Bread & Butter Pudding

4 eggs
¼ cup caster sugar
1 tsp vanilla
¼ tsp cinnamon
2 cups milk
200 ml cream
6 slices of Ploughmans bread
50g softened butter
½ cup frozen berries
¼ cup apricot jam

Method

  1. Preheat the oven to 180°C. Grease lightly a 1-litre ovenproof dish.
  2. Whisk together the eggs, sugar, vanilla, cinnamon, milk and cream.
  3. Butter the bread and cut it into triangles. Arrange in your baking dish.
  4. Pour over the egg mixture, soaking the bread.
  5. Bake for 15 minutes, then brush with the jam. Cook for another 20 minutes until golden.
  6. Serve it warm alongside vanilla ice cream.
